GELATIN POWDER
Gelatin is defined as the product obtained from the acid, alkaline, or enzymatic hydrolysis of collagen, the chief protein component of the skin, bones, and connective tissue of animals, including fish and poultry. There are no plant sources of gelatin, and there is no chemical relationship between gelatin and other materials referred to as vegetable gelatin, such as seaweed extracts.
Depending on the source, collagen is either treated with acid or alkali. Once this pretreatment is over, gelatin is extracted by subsequent heating in water. This extract is then filtered, de-ashed, concentrated, and dried. After drying, it is crushed to the desired mesh size and packed in bags.

PACKING & STORAGE
Phoenix gelatins are available in 50 kg HDPE bags with liners.
Gelatins should be stored in sealed bags in cold dry conditions away from odoriferous materials.
Once opened, the container can be resealed without detriment to the contents. Under such conditions, gelatins are generally considered to be stable almost indefinitely.
Recommended storage life is a maximum of five years, after which the gelatin should be retested for Bloom.
